Last week we were in Savannah. The weather was warm and around 70 degrees. It made us think of summer and what says summer more than key lime! This is a yummy dairy free ice cream and it is sure to remind you of those long summer days.

2 15-ounce cans of coconut milk (select a high quality, high fat content
brand. Should be thick when opened.)
1 cup of raw sugar.
1 teaspoon of vanilla
1 bag of key limes

Mix coconut milk with raw sugar. Add vanilla and key lime juice to taste.
Chill mixture in refrigerator for minimum two hours.

Prepare using directions on ice cream maker.
